1 3/4 C. Swans Down cake flour
2 C. sugar
2 C. egg whites
1/2 t. salt
2 t. cream of tarter
1 1/2 t. vanilla


Measure sifted flour. Add 1/2 C. sugar and sift 3 times.
Beat egg whites and salt until foamy. Add cream of tarter,
beat until stiff enough to stand in peaks. Add the rest of sugar and vanilla. Fold in flour.
Bake at 350 for 50 minutes.
