Apple Cinnamon Coffee Cake

Topping:
2 c. Apple-Cinnamon Toasted Oats cereal, coarsely crushed
1/2 c. brown sugar, packed
1/4 c. butter, melted
2 T. flour
1 t. cinnamon

Cake:
1 1/2 c. sugar
1 c. vegetable oil
2 eggs
1/4 t. salt
1 t. vanilla
2 c. all-purpose flour
1 c. Apple-Cinnamon Cheerios, finely crushed
1 t. baking soda
4 c. apples, cored, peeled and chopped

Heat oven to 350. Combine all topping ingredients and set aside. In a large bowl beat sugar, oil, eggs, salt and vanilla until light and fluffy.
Slowly add flour, crushed cereal and soda, mix well. Stir in apples. Spread batter into greased 13 x 9 pan. Sprinkle topping over batter.
Bake for 50 – 55 minutes or until toothpick comes out clean. yield: 16 servings
