Apple Pie Bars

Crust:
4 c. white flour
1 t. salt
1 t. baking powder
1 c. lard
4 egg yolks
2 T. lemon juice
8-10 T. cold water

Filling:
7 c. finely chopped, peeled apples
2 t. cinnamon
dash of nutmeg
2 c. sugar
¼ c. flour

Glaze:
1 c. confectioner’s sugar
1 T. lemon juice
1 T. milk

Directions

Combine flour, salt, baking powder and lard until mixture is crumbly. Whisk egg yolks, lemon juice and water; add to flour mixture, tossing with folk until dough forms a ball. Divide in half. Chill 30 minutes. Roll out 1 part of dough between two large sheets of wax paper, into a 17 x 12 rectangle pan. Transfer to an ungreased 15 x 10 baking pan. Press onto bottom and up side of pan. Combine all filling ingredients, spread over crust. Roll out remaining crust as you did bottom crust; place over filling. Press top and bottom crust together; trim edges and pinch to seal. Cut slits in top. Bake at 375 degrees for 40-45 minutes or until golden brown. Cool; the drizzle with glaze
