2 c. brown sugar
1 c. shortening
2 eggs
2 c. mashed bananas
1 tsp. baking soda
½ tsp. ginger
1 tsp. vanilla
1 tsp. salt
1 tsp. baking powder
½ tsp. cinnamon
3 ½ c. flour
Directions
Mix all together and drop onto cookie sheet; bake
When cool, sandwich together with the following icing:
1 egg white, beaten
2 T. flour
2 T. milk
1 c. powdered sugar
1 tsp. vanilla
¾ c. shortening
1 c. powdered sugar
Cream together the first 5 ingredients. Add shortening and powdered sugar.
