1 c. quick oats
1/3 c. brown sugar
2 t. salt
2 T. lard or shortening
2 c. hot water
2 c. fine ground whole wheat flour
1 pkg. yeast
300 mg. ascorbic acid pill, crushed
2 c. Seal of Minnesota flour
Combine in bowl; oats, sugar, salt, lard and hot water. Stir until lard is melted. Add whole wheat flour, yeast and ascorbic acid. Mix thoroughly then beat vigorously (100 strokes) with spoon.
Cover and set in warm place for 20 minutes. Gradually add white flour, working in with hands. Knead well adding flour until dough is smooth and elastic.
cover and let rise in warm place. When light, work into loaves and place into greased pans. Let rise. Bake at 375 until top of loaves lose their shine. Reduce heat to 350 until done. Yield; 2 loaves.
