Cauliflower Cheese Soup

10-12 oz. cauliflower
1/2 C. water
1 T. minced onion
1/2 C. evaporated skim milk
3 oz. soft cheese
salt and pepper to taste


Cook cauliflower and onion in water until overdone or mushy. Mash with a fork. Add milk and diced cheese. Heat until cheese melts and season to taste.
