Lemon Bars

1 C. flour
1/4 C. powdered sugar
1/3 C. softened butter
1 C. sugar
2 T. flour
1/2 t. lemon extract
1/4 t. salt
2 eggs
1 1/2 T. lemon juice
1/2 t. baking powder
powdered sugar


Combine the crust ingredients and pat into an 8 x 8 cake pan. Bake at 375 for 15 minutes. Topping: combine the sugar, eggs, flour, lemon juice, extract, baking powder and salt in a mixer bowl. Mix until frothy; pour over crust. Bake at 375 for 18 – 22 minutes or until light golden brown. Dust with powdered sugar. Yield: 9 servings
