Mag’s Jello Pastel Cookies

3 ½ c. white flour
1 ½ c. (three sticks) butter or margarine, softened
1 c. granulated sugar
1 egg
1 t. vanilla
1 t. baking powder
2 pkg. (4 serving each) Jello Strawberry gelatin, divided


Preheat oven to 400 degrees. Mix flour and baking powder; set aside.. Beat butter in large bowl until creamy. Gradually add sugar and one package of the dry gelatin, beating until light and fluffy. Add egg and vanilla; mix well. Gradually add flour mixture until well blended after each addition. Shape dough into one inch balls. Place cookies two inches apart on ungreased cookie sheets. Flatten with bottom of clean glass. Sprinkle lightly with remaining package of dry gelatin. Bake 8-10 minutes or until edges are lightly brown. Cool completely and store in air tight container
