3 c. granulated sugar
1/2 c. water
1/2 c. light corn oil
2 egg whites
1 t. vanilla
1/2 c. peanut butter chips
1/2 c. roasted peanuts, chopped
Combine sugar, water and syrup in 3 qt. saucepan; cook over low heat; stirring constantly, until sugar dissolves. Cook over high heat, without stirring, until mixture reaches hard boil stage (260).
Have egg whites at room temperature; beat in large mixing bowl until stiff peaks form. Pour hot sugar mixture in a very thin stream over egg whites while beating at high speed. Add vanilla and continue beating until mixture holds its shape (5-7 min.)
Stir in remaining ingredients. drop by teaspoonful onto waxed paper.Let stand until firm. makes about 3 1/2 dozen.
