6 large potatoes
salt to taste
4 egg yolks
1/2 c. butter
1/2 c. cheese spread
3/4 c. flour
cracker crumbs
Dice potatoes, add salt; cover with water. Bring to boil, uncover and boil until soft, but not mushy; drain. Put potatoes back on low heat until potatoes are dry.
Place potatoes in large bowl and mash with Whisk. Add egg yolks, butter and cheese spread, mix well. Fold in flour. Form into ping-pong sized balls and roll in cracker crumbs. Deep fat fry.
