2 c. sugar
1 3/4 c. pumpkin or a 15 oz. can
1 c. vegetable oil
4 eggs
2 c. flour
1 tsp. soda
2 tsp. baking powder
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. salt
1/8 tsp. cloves
1/2 c. raisins
1/3 c. chopped pecans
Frosting:
1/3 c. butter, softened
1 – 3 oz. pkg. cream cheese, softened
1 T. milk
1 tsp. vanilla
2 c. powdered sugar
In a bowl mix sugar, pumpkin, oil and eggs. Combine the flour, baking powder, baking soda, cinnamon, nutmeg, salt and cloves. Gradually add to pumpkin mixture and mix well. Stir in raisins and nuts. Pour into a 10 x 15 inch pan. Bake for 25 – 30 minutes at 350. Frost when cool.
